One and a half months for a meal that barely serves three. Puts things into perspective. I wish I could say the spinach tasted so much better than it’s store-bought equivalent but a blocked nose made sure I couldn’t taste much. My parents weren’t very helpful either, they said, “It tasted like spinach!”. But for some reason, the meal didn’t matter really. The process was so much more fun. Towards the end, the spinach grew so huge it was curling around the LED tube lights and had the beginnings of what looked like it could be spinach flowers. I never put spinach and flowers together for some reason.
I finally gathered the courage the cut the overgrown leaves from the plant. I had to cut the leaves in installments and wait till we had enough for a portion of “Palak Paneer”.
The freshness of the spinach was apparent with the crunching of the leaves as they were sliced on the chopping board. Not like the shop spinach that could never be as fresh – or as pesticide free! My mom put together the dish in about 15 minutes and I brought out our fanciest cutlery.
We finished dinner in about 5 minutes. 6 weeks for five minutes. But it was worth it. I want to do that again. Next up, carrots! and I have the beginnings of a bigger setup to hopefully grow some parsley and some peppers.
